عسل ،ماده غذايي بسيار غني و انرژي بخشي است که حدود۸۰ درصد از قندهاي ساده يا مونوساکاريدها ساخته شده و هر۱۰۰ گرم آن ۳۲۰ کالري ايجاد مي کند اين مونو ساکاريدها بسرعت جذب مي شوند و اثر انرژي بخشي خود را آشکار مي کنند گفتني است ، علاوه بر اثر کالري زايي ، عسل داراي ويتامين هاي متعددي از قبيل تيامين ، ريبوفلاوين ، اسيدنيکوتينک ، اسيد اسکوربيک ، پيريدوکسين و ويتامين کا است.

در كتب پزشكي آمده عسل درروغن مالي زخمهاي چركي ، براي درمان بسيار مفيد بوده ، با مرهم گذاري تاريكي ديد را كاهش داده و بهترين درمان اختلالات دهان است در زياد شدن ادرار مؤثر است ، دردهاي شكم و سرفه را كاهش مي دهد ، گزيدگي مار ، دردهاي دستگاه تنفس وهر درد مفصلي را تسكين ميدهد . خستگي عمومي واحساس سرما را رفع ومقاومت بدن را افزايش ميدهد.

اثرات درماني عسل
بشر هزاران سال است كه از مخلوط بزاق زنبور و شهد گل كه عسل نام دارد، به عنوان دارويي براي درمان زخم ها استفاده مي* كند . آزمايش هايي كه در سال هاي اخير انجام گرفته، نشان داده اند كه عسل در درمان عفونتهاي برجاي مانده از عمل سزارين و سوختگيهاي از آنتي بيوتيكهاي مرسوم كارآمدتر عمل مي*كند. اين ماده شيرين با طيف وسيعي از ميكروبهاي خطرناك از جمله Helicobacter , Salmonella , E.coli به خوبي مبارزه مي كند عسل روي باكتري*هاي مقاوم به آنتي بيوتيك، از جمله «ابر ميكروبي» به نام MRSA ، نيز موثر است و بر خلاف بيشتر آنتي بيوتيك ها به نحو چشمگيري باعث پيشرفت بهبودي زخم*ها مي*شود. هنوز به درستي نمي*دانيم عسل چگونه اين آثار را بر جاي مي*گذارد اما محققان اعتقاد دارند توان بهبود زخم*ها و مقابله با ميكروب*هاي مقاوم به آنتي بيوتيك* كه در اين ماده بي*نظير وجود دارد، ممكن است روزي عسل را از نوعي درمان جايگزين به يك شيوه درماني اساسي در پزشكي تبديل كند. رمز و راز اين توانايي*ها را بايد در شيوه تهيه عسل جست و جو كرد. زنبورهاي كارگر طي بهار و تابستان شهد جمع آوري مي كنند، هنگامي كه به كندو باز ميگردند، آن* را از معده به دهان مي آورند و در دهان دستياران خود مي*گذارند. آنها شهد را به درون حفره هاي شانه خالي مي كنند و با بال*هايشان آن قدر آن را باد مي*زنند كه بيشتر آب موجود در شهد تبخير شود. در همين زمان، بزاق سرشار از آنزيم* زنبورها، ساكاروز را به گلوكز و فروكتوز تبديل مي كند كه به آب باقيمانده در شهد پيوند مي*شوند . به اين ترتيب، بياباني بر جاي مي ماند كه باكتري*ها نمي*توانند در آن زنده بمانند. البته ، حين رسيدن عسل فرصت زيادي براي تهاجم عوامل بيماريزا وجود دارد. اما آنزيمي به نام گلوكز اكسيداز اين فرصت را از آنها مي*گيرد. اين آنزيم با تبديل كردن گلوكز به اسيد گلوكونيك، فرآورده تلاش زنبورها را اسيدي و آن را براي بيشتر باكتري ها نامطلوب مي سازد .
اغلب افراد عقيده دارند كه اسيدي بودن، تنها سلاح عسل در برابر باكتري*هاست. اما مطالعات نشان داده اند تقريبا همه عسل ها سلاحي سري دارند كه حتي اگر رقيق شوند، آنها را براي ميكروب*ها مرگبار مي*سازد: پراكسيد هيدروژن. اين ماده زماني در بيمارستان*ها به عنوان ضدعفوني كننده مصرف مي*شد. از تجزيه اين ماده راديكال هاي آزاد تشكيل مي شوند كه باكتريها را از بين ميبرند. چون اين واكنشها خيلي سريع رخ ميدهد، پراكسيد هيدروژن را بايد در غلظتهاي بالا بر زخم*ها استعمال كرد. البته ، اين ماده در اين غلظتها به بافت سالم آسيب مي زساند . در عسل، پراكسيد هيدروژن به كمك آنزيم گلوكز اكسيداز توليد مي*شود. اما ميزان آن هزار بار كمتر از مقداري است كه در گذشته روي زخمها استعمال مي*شد. در نتيجه ، گذاشتن عسل روي زخمها، ضمن جلوگيري از تهاجم و تخريب ميكروب*ها ، با آسيب بافتي همراه نيست. علاوه بر اين، همين طور كه پراكسيد هيدروژن تجزيه ميشود ، گلوكز اكسيداز با تسهيل ساختن آن از گلوكز، پيوسته آن را جايگزين مي*كند. جالبتر اين كه ، به دلايل ناشناخته وقتي عسل رقيق ميشود، فعاليت اين آنزيم افزايش مي*يابد. . به همين خاطر، عسل حتي وقتي ۷ تا ۱۴ برابر رقيق شود، ميتواند از رشد باكتريهايي مانند MRSA جلوگيري كند. خلاصه ، زماني كه عسل روي زخم قرار مي گيرد و در اثر تراوش پلاسما از زخم رقيق مي شود ، در مبارزه با ميكروبها پرتوانتر شود . تقويت بهبود يافتن زخم يكي ديگر از خصوصيات جالب عسل كه آن را از داروهاي ضد باكتري مرسوم مجزا مي*سازد، تقويت بهبود يافتن زخم هاست . داروها ي ضد باكتري علاوه بر نابودي باكتري*ها به سلول*هاي انسان نيز آسيب مي*رسانند . از طرف ديگر، آنها فقط با مهار كردن رشد ميكروب*ها به بهبودي زخم*ها كمك مي*كنند. اما عسل به طور مستقيم در بهبودي زخم*ها دخالت مي*كند. عسل محيط ويژه اي را مي آفريند كه براي رشد بافت مناسب است و در عين حال باميكروب*ها نيز مبارزه مي*كند. به علاوه، رطوبت عسل از درد وتخريب سلولها حين تعويض پانسمانهاي خشك شده جلوگيري مي كند .
عسل دست كم بخشي از توان ترميمي خود را مديون پراكسيد هيدروژن است. اين ماده، رشد رگ*هاي خوني را تحريك مي**كند. اين رگها اكسيژن، مواد غذايي و سلول*هايي به نام فيبروپلاست ( كه بافت پيوندي جديدي را مي*سازند) را به موضع زخم هدايت مي*كنند. به علاوه، تركيب ناشناختهاي دسته اي از سلول*هاي ايمني به نام منو سيت رافعال مي*كند. اين سلولها عامل رشدي را آزاد مي*كنند كه سلول*هاي پوششي را تحريك مي*كنند تا تقسيم شوند و زخم را ببندند. منوسيت*ها به نوع ديگري از سلول*هاي ايمني به نام ماكروفاژ نيز تبديل مي**شوند. اين سلولها، ميكروبها و سلولهاي مرده را ميبلعند و آنها را هضم مي كنند .
عسل در بهبود يافتن زخم معده نيز موثر است. يك قاشق چاي خوري عسل طبيعي در معده خالي ميتواند مانع رشد باكتري خطرناكي به نام Helicubacter شود كه باعث اغلب زخم**هاي معده مي*شود. عسل، باكتري* مقاوم به آنتي بيوتيكي را كه باعث عفونت ريوي در بيماران مبتلا به فيبروز سيستيك ميشود ، Burkholderia cepacia ، در محيط كشت از پا در آورده است.

همان طور كه قبلا اشاره شد چهار پنجم وزن عسل را كربوهيدرات*ها تشكيل مي*دهند و بقيه آن عبارت است از: پروتئين، املاح معدني، عناصر معطر، آنزيم*ها، ويتامين*ها، گرده گل و آب. هر ۱۰۰ گرم عسل ۳۳۰ كيلوكالري انرژي توليد مي*كند. لذا عسل، غذايي مقوي و انرژي*زاست و به كمك دياستازهايش چربي*هاي اطراف قلب را آب مي*كند. به همين دليل مصرف آن به سالخوردگان و بيماران قلبي توصيه مي*شود.
.درمان بيماري هاي کليوي با عسل

.عسل و بيماري روده
عسل به علت دارا بودن اسيد فرميك دردهاي روده را به خوبي تسكين داده و همچنين به جهت وجود اسانسهاي فرار ( عطرگياهان مختلف ) نارسايي هاي ناگوار روده را برطرف مكند ؛ بنابراين توسيه ميشود تمام افراد در هر سني مصرف عسل به صورت شربت با افزودن مقداري عرقيات گياهي مثل آويشن (كاكوتي ) ، شاه اسپرهم، ويا آبليمورا در رژيم غذائي هفتگي خود داشته باشند. سل و درمان ضعف اعصاب
