بررسی فاکتورهای مختلف موثر بر روی تست الکلی شیر خام در منطقه اصفهان

چکیده
با توجه به اینکه از تست الکل به عنوان شاخص جهت سنجش ناپایداری شیر در برابر حرارت استریلیزه استفاده می شود و نیز اینکه دیده شده عوامل مختلف نا شناخته ای بر این تست اثر می گذارند، این تحقیق با هدف بررسی فاکتورهای مختلف موثر بر تست الکلی شیر خام در منطقه اصفهان صورت گرفت.

برای این منظور آزمایش های سوماتیک سل کانت (S.C.C.)، شمارش کل باکتریایی، تست الکل ۶۸ و ۷۴ درجه، اندازه گیری میزان چربی، ماده خشک، پروتئین، کربنات کلسیم، دی کلسیم فسفات (DCP)، سیلو، علوفه، کنستانتره، کلسیم شیر و دانسیته ۱۲۰ نمونه شیر مخلوط و ۷۰۸ نمونه شیر انفرادی در چهار فصل انجام شد و میزان همبستگی بین نتیجه تست الکل و فاکتورهای فوق الذکر محاسبه گردید.همچنین بررسی عوامل بهداشتی، مدیریتی و تغذیه ای بر تست الکلی توسط تکمیل پرسشنامه مخصوص در هر بار سرکشی انجام شد.همبستگی معنی داری بین نتیجه تست الکل و آزمایش چربی، ماده خشک، پروتئین، کربنات کلسیم، کنستانتره، علوفه، دی کلسیم فسفات و بار میکروبی به دست نیامد، همچنین همبستگی بین نتیجه تست الکل و پروتئین، درجه حرارت، کلسیم شیر، سیلو و سوماتیک سل کانت در نمونه های انفرادی و نمونه های مخلوط معنی دار بود.

با توجه به همبستگی غیر معنی دار و یا ضعیف تست الکل با برخی فاکتورهای مذکور و حساسیت و ویژگی بسیار کم این تست می توان نتیجه گرفت که تست الکل ملاک و معیار قابل قبولی جهت ارزیابی شیر گاو از نظر اسیدیته، بار میکروبی و سلول های سوماتیک شیر نمی باشد.
