ساخت کیت تشخیصی کنسرو تقلبی ماهی در ایران

کیت تشخیصی کنسرو تقلبی ماهی تون از نمونه واقعی، برای اولین بار در کشور، توسط عضو هیات علمی گروه ژنتیک دانشگاه شهرکرد طراحی و ساخته شد.
محمدرضا زارعیان، مسوول روابط عمومی دانشگاه با اعلام این مطلب خاطرنشان کرد: دکتر علی محمد احدی، عضو هیات علمی گروه ژنتیک دانشگاه شهرکرد، پس از چهار سال تحقیق و پژوهش موفق به طراحی و ساخت کیت تشخیصی کنسرو ماهی تون تقلبی از نمونه*ی واقعی شد.
وی خاطرنشان کرد: در صنعت تولید کنسرو ماهی تون ، گوشت ماهی های مرغوب گونه های تون در شرایط خاص تا دماهای بسیار بالا حرارت می بیند و روندی را طی می کند که به دست آوردن DNA در حالت طبیعی بسیار محدود و مشکل خواهد بود. در عین حال در این صنعت برخی سودجویان اقدام به عرضه* کنسرو های ماهی تون تقلبی می*کنند که آلوده به گوشت گونه های نامرغوب و حتی بسیار بی ارزش است.
زارعیان تصریح کرد: در این بررسی با مطالعه* دقیق میتوکندریایی گونه های بسیار نزدیک به ماهی تن شامل برخی بادبان ماهی ها، اسب ماهی ها و نیزه ماهی ها روشی برمبنای Nested-PCR طراحی شد که در یک مرحله و با دقتی بسیار بالاتر از روش های مرسوم قادر به شناسایی وجود گوشت گونه های نزدیک تقلبی و کم ارزش در گوشت تن ماهی پخته شده به شکل کنسرو است.
وی اظهار داشت: این طرح با همکاری موسسه استاندارد و همراهی مهندس مینا میری از سال 1385 آغاز و نتایج اولیه آن نیز در همان سال در همایش ملی صنایع غذایی در دانشگاه صنعتی اصفهان منتشر شد و در حال حاضر مراحل مقایسه و تایید خود را نیز طی کرده است.
