تفاوت خاويار مصنوعي با خاويار طبيعي

در سال*هاي اخير تهيه خاويار مصنوعي در كشورهاي اسپانيا، روسيه و ژاپن رونق پيدا كرده و بيشتر متكي بر تهيه محصولي مشابه خاويار تاس ماهيان و آزاد ماهيان بوده است.

از تخم*هاي منجمد ماهي آزاد و ماهي هرينگ نيز خاويار تهيه مي*نمايند كه مجموع توليد اين نوع خاويار حدود ‪ ۱۰۰‬تن در سال بوده كه ‪ ۲۵‬تن از آن به كشورهاي مختلف صادر مي*شود.

در تكنولوژي ساخت خاويار مصنوعي، تمامي تخم*ها را به شكل خميري در آورده و پس ازاضافه كردن ژلاتين به آن و تنظيم ويسكوزيته آن وسپس از قطرات توپي شكل به قطر دو تا سه درست مي*نمايند.

براي اجراي مرحله اخير يك ماشين مولتي نوزل به كار مي*برند كه با اشعه مادون قرمز كار مي*كند عمل آوري در آب نمكي كه طعم خاويار به آن داده شده انجام مي*گيرد.

خشك كردن محصول برحسب خصوصيات آن انجام و سپس بسته بندي و
پاستوريزاسيون آن به اجرا گذاشته مي*شود.

كمپاني ‪ EUROPROM‬در كشور روسيه از سال ‪ ۱۹۹۷‬توليد خاويار مصنوعي از ماهيان خاوياري و سالمون با نام ‪ TEZAR CVIAR‬را آغاز كرده و براي ساخت خاويارهاي فوق طبيعي ماهي، روغن زيتون، پكتين، انواع ادويه جات، ماده نگهدارنده، سديم بنزوات و رنگ مصنوعي استفاده مي*كند.

مدت ماندگاري خاويارهاي مصنوعي در دماي صفر تا سه درجه سانتي گراد پنج ماه است.

هدف از انجام اين بررسي مشخص كردن تفاوت*هاي كيفي و ارزش غذايي خاويارهاي مصنوعي در مقايسه با خاويارهاي طبيعي و همچنين حفظ جايگاه خاويار ايران در بازارهاي داخي جهت صادرات است.

در اين بررسي از خاويارهاي وارداتي كه در دو گروه به شكل خاويار سوروگا و سالمون به طور مصنوعي يا سنتتيك توليد شده يود نمونه برداري و آزمايشات ارگانولپتيك، شيميايي و مولكولي به انجام رسيد.

نتايج بررسي نشان داد كه خاويارهاي بررسي شده غير طبيعي بوده و به طور سنتتيك توليد شده و از لحاظ كيفيت ارگانولپتيك، شيميايي كاملا با خاويارهاي طبيعي متفاوت بوده و تمام مقادير ان بسيار كمتر بوده است.

همچنين بررسي*ها نشان داد خاويارهاي مصنوعي از طريق مواد افزودني و در قالب خاويار مصنوعي توليد شده و به محض قرار گرفتن در شرايط گرما از لحاظ ظاهري شكلي ناپايدار به خود گرفته و به ژله تبديل مي*شوند.

طعم و مزه خاويارهاي مصنوعي مانند اسانس*هاي مصنوعي بوده و با طعم خاويار طبيعي كاملا متفاوت است از لحاظ دانه بندي برخلاف خاويار طبيعي كه شكل بيضي يا گرد دارند خاويارهاي فوق اشكال چند وجهي داشته و به صورت توده ژله*اي مي*باشد.

نتايج بررسي مولكولي نيز نشان داد كه بر خلاف خاويار طبيعي، خاويار مصنوعي فاقد ماده وراثتي يا ‪ DNA‬است و بر روي ژل الكتروفورز آثاري از ماده وراثتي مشاهده نمي*شود.
