اندازه و تركيب تخم مرغ به چگونگي تغذيه مرغ، وزن بدن، سن و ژنوتیپ مرغ و ژريم نوري گله بستگي دارد.

مقدار وارثت *پذيري وزن تخم مرغ بسيار بالاست و از اين رو با انتخاب ژنتيكي به آساني تغيير*پذير است هر چند كه همبستگي ژنتيكي آن با نرخ تخمگداري منفي است.

برآورد*هاي میزان وارثت*پذيري اين صفت بالا ( ۴۵/۰ تا ۰/۸۵) است كه نشان مي*دهد دست كم ۵۰ درصد از تغيير وزن تخم مرغ در كنترل ژنتيكي است.

درعمل مراكز به نژادي به آساني مي*توانند به تخم مرغ*هايي به وزن ۶۰ تا ۶۲ گرم دست يابند كه براي مصرف به بازار فرستاده مي*شود.

وزن تخم مرغ، همبستگي بالايي با وزن بدن دارد و بنابراين انتخاب براي وزن تخم مرغ، موجب افزايش اندازه مرغ شده و برعكس، انتخاب براي افزايش اندازه مرغ موجب بزرگ شدن تخم مرغ مي*شود.

به هر حال بايد تا اندازه*اي در بكارگيري اين اصل محتاط بود كه مرغ*هاي بزرگ، تخم مرغ*هاي بزرگ و مرغ*هاي كوچك، تخم مرغ*هاي كوچك*تر مي*گذارند.

اگر چه اين قاعده كلي به هنگام بيان رابطه بين وزن تخم مرغ و بدن در يك گله با نژاد ژنتيكي معين سودمند است، اما براي مقايسه بين گله*ها روايي ندارد.

برای نمونه مرغ*هاي مادر گوشتي تجارتي كه توان ژنتيكي آنها براي رشد بيشتر از مرغ*هاي مادر تخمگذار است، تخم*هايي تقريباً هم اندازه توليد مي*كنند با وجود اينكه تفاوت جرم بدن آنها نزديك به ۸۰۰ تا ۱۰۰۰ گرم است.

از آنجا كه مصرف روزانه برخي از اجزاي جيره بر وزن تخم مرغ تاثير مي*گذارد، هر وضعيتي كه موجب كاهش مصرف خوراك شود وزن تخم مرغ را نيز كاهش خواهد داد.

هنگامي كه نيازهاي انرژي براي نگهداري، فعاليت و توليد تخم مرغ از منابع غير پروتئيني تامين شود، ميزان پروتئين مصرفي مرغ براندازه تخم مرغ تاثير خواهد گذاشت.

در اين شرايط با افزايش پروتئين جيره از ۱۲ به ۱۹ درصد، وزن تخم مرغ را مي*توان بين ۲ تا ۴ گرم تغيير داد.

اهميت وزن بدن در مرغ*هاي تخمگذار بيشتر به دليل رابطه آن با ميزان غذاي مصرفي، سن بلوغ جنسي و وزن تخم مرغ است.

براي اين مرغ*ها، پايين بودن وزن بدن براي نياز كمتر به فضا پرورشي و همچنين انرژي نگهداري پائینتر به ازاي هر مرغ مناسب به نظر مي*رسد.

با توجه به همبستگي مثبت بين وزن بدن يا وزن تخم مرغ كاهش بيش از حد در وزن بدن مي*تواند منجر بر توليد تخم هاي خيلي كوچك شود كه در كاهش درآمد توليدكننده نقش خواهد داشت.

همچنين اندازه تخم مرغ تحت تاثير سن و ژنوتيپ مادري مي*باشد. وزن تخم مرغ بین سويه*هاي مختلف متفاوت است . تفاوت وزن تخم مرغ در لاينهاي مختلف به دليل تفاوت در وزن زرده، آلبومين و پوسته مي*باشد .
