ماهي چرا بو مي*دهد؟

شما فکر مي کنيد تهوع آورترين بوي دنيا چيست؟ اگر بگوييد بوي ماهي گنديده، من با شما موافق ام! ولي هيچ مي دانستيد ماهي زنده نه تنها بوي بدي ندارد بلکه کاملا برعکس، بوي خوبي مي دهد؟

ماهي سالم بوي دريا و يد مي دهد و گوشت آن بوي ملايم و دلپذيري دارد. اما در يک لحظه اين موضوع مي تواند تغيير کند.

ماهي ها مي توانند بوي تندي از خود متصاعد کنند که نه تنها روي دست صياد، آشپز و روي تخته گوشت آشپزخانه باقي مي ماند بلکه مي تواند تا کيلومترها در آب دريا پراکنده شود...

بو در اثر مواجهه ترکيبات قابل تبخير با گيرنده هاي بويايي به وجود مي آيد؛ يعني بو حاصل ترکيباتي است که با هوا ترکيب مي شوند و گيرنده بويايي مي تواند آنها را دريافت کند.

در حدود 300 هزار ترکيب قابل تبخير وجود دارد و انسان مي تواند حدود 10 هزار نوع آن را حس کند. البته بسياري از حيوانات از جمله سگ مي توانند تعداد بسيار بيشتري را درک کنند.

از ميان ترکيبات قابل تبخير، برخي در نظر انسان بسيار بدبوست که از آن جمله مي توان به بوي ماهي درحال فساد اشاره کرد. ترکيبات شيميايي مسوول اين بوي بد از ترکيبات ازتي به وجود آمده است.

به عبارت ديگر در اين ترکيبات، ازت، کربن و هيدروژن زيادي وجود دارد. نام علمي اين ترکيبات متيل آمين است که البته انواع مختلف ديگري مانند دي متيل آمين و تري متيل آمين دارد.

اين مولکول ها به 2 روش متفاوت ايجاد مي شود.

در روش اول اين ترکيبات و در نتيجه بوي بد در اثر اتوليز گوشت ماهي به وجود مي آيد. پس از مرگ و به دليل توقف فعاليت ارگانيسم، سلول هاي حيوان دچار تغييرات دروني مي شوند.

به ويژه نوعي ترکيب به نام اکسيد تري متيل آمين که موظف به هماهنگ کردن و اندازه کردن ميزان دروني نمک دچار تغيير شده و تبديل به تري متيل آمين مي شود.

اين ترکيب قابل تبخير در هوا پخش شده و ماهي شروع مي کند به بوي بد دادن.

باکتري ها بي کار نيستند

يکي ديگر از روش هاي به وجود آمدن اين بوي نامطبوع و البته مهم ترين و اصلي ترين دليل آن، فعاليت باکتري هاست. اين باکتري ها روي پوست ماهي، درون آب شش ها و دستگاه گوارش آن وجود دارد.

وقتي ماهي زنده است و البته دقيقا تا چند لحظه پس از صيد شدنش دستگاه ايمني گوشت اين حيوان را استريل نگه مي دارد

اما پس از مرگ برخي باکتري ها که دشمني ندارند شروع به فعاليت مي کنندو مايه فساد وگنديدگي ماهي مي شوند.

فعاليت باکتري ها سبب به وجود آمدن ترکيبات متيل آمين ها و آمونياک ها و ديگر ترکيبات و ملکول هاي بدبو مي شود.

در کنار آنها مقدار کمي از 3 گروه ديگر مواد بدبو شامل ترکيبات گوگردي (بوي تخم مرغ و سبزيجات گنديده)، آلدئيدها (مزه ترشيدگي) و اسيدهاي چرب قابل تبخير (مثل سرکه) نيز توليد مي شود.

بوي ترشيدگي در اثر چربي ماهي که اکسيد مي شود به وجود مي آيد. سرعت فساد و گنديدگي گوشت ماهي به نوع و گونه ماهي بستگي دارد.

مثلا ماهي هايي که پوست نازک و سست دارند، سريع تر از آنهايي که فلس هاي ضخيم دارند، مي گندند.

شرايطي که ماهي ها در آن کنسرو مي شوند هم مي تواند بر بروز اين بوي بد تاثير بگذارد.

گوشت ماهي وقتي نپخته هنوز هم اين بو را دارد و ما به کمک آب ليمو و آب پياز سعي در کم کردن آن داريم. البته غذاهايي از ماهي تهيه مي شودکه به هيچ وجه بوي ماهي نمي دهد.

به عنوان مثال سوريمي نوعي غذاست که ژاپني ها درقرن17 آن را تهيه کردند. در تهيه آن به محض صيد ماهي شکم آن را خالي کرده، با آب شيرين مي شويند و چربي، آب شش ها و...را پاک مي کنند.

به عبارت ديگر تنها چيزي که از ماهي به محض صيد مي ماند گوشت سفيدي است که بو و مزه ندارد.
