شیر دوشی

بيشترين مقدار شير در فاصله هفته هاى دوم تا دهم پس از زايش توليد مى شود، پس از اين مدت توليد شير سير نزولى دارد. طول دورهٔ شيروارى بستگى به ميزان خوراک بز ماده و زمان جفتگيرى دارد. معمولاً دامداران اغلب بزهاى ماده خود را در حدود ۱۲ هفته پس از زايش جفتگيرى مى دهند، بدين ترتيب مى توان در طول دو سال سه زايش انجام داد.
در گاو عمل خروج شير از غده پستانى يک واکنش غيرارادى است که تحت تأثير سيستم اعصاب و هورمون ها است و پس از تحريک شدن حيوان شير از غده پستانى خارج مى شود.. در بز براى خارج کردن شير از غده پستانى لازم نيست که حيوان را زياد تحريک کرد.
بدين جهت زمان شيردوشى تا اندازه اى متغير است. على رغم اين تغيير شخص شيردوش مى تواند تا اندازه اى در مقدار شير توليدى اثر بگذارد.
فرق ديگر بين بز و گاو از نظر شيردوشى در اين است که حجم مخزن شير که با زمان شيردوشى ارتباط دارد در بز نسبت به گاو بزرگتر است.
در گاو اگر زمان شيردوشى خيلى متغير باشد سبب مى شود که فشار ناشى از شير موجود در غده پستانى توليد شير کاهش يابد. وجود مخزن بزرگ شير در غده پستانى بز سبب مى شود که فواصل شيردوشى تأثير چندانى در مقدار شير توليدى نداشته باشد.
اگر بز روزانه سه بار دوشيده شود مقدار شير توليدى به مقدار قابل ملاحظه اى افزايش خواهد يافت، تحريک بز در موقع شيردوشى در مقايسه با ساير فاکتورها بيشتر سبب کاهش فشار خروج شير مى شود.
اگر بزهاى زايمان نکرده به طور مرتب و به خوبى تحريک بشوند خودبه خود شير توليد مى کنند.
عمل شيردوش در بز هم به وسيله دست و هم به وسيله ماشين انجام مى گيرد.
