طرز تشخیص عسل اصل

واقعیت این است که افراد عادی نمی*توانند عسل مطلوب را از نامطلوب تشخیص بدهند. عسل دارای رنگ، مزه، طعم و عطر به*خصوصی است و هر کدام از اینها طیف گسترده**ای دارد. به عنوان نمونه، عسل دارای طعم*های تند تا ملایم است و مزه آن بسته به گلی که از آن عسل تهیه شده، تفاوت دارد. این ذایقه افراد است که باید طعم عسل را بپسندد. به عنوان نمونه، بعضی*ها طعم تند عسل را دوست دارند و بعضی*ها هم طعم ملایم آن را می*پسندند. پس ما نمی*توانیم بگوییم عسل با طعم تند بهتر از عسل با طعم ملایم است.
عسل*های تیره، عسل*های روشن
مشخصه بعدی، رنگ عسل است. رنگ عسل معمولا از کِرِم شیری تا قهوه*ای تیره، متغیر است و نمی*توانیم بگوییم که عسل تیره بهتر از عسل روشن است. این، ملاک خوبی برای انتخاب عسل نیست زیرا شهد گل*ها در مناطق مختلف رنگ*های متفاوتی دارند. به*عنوان نمونه، رنگ عسل منطقه کردستان با منطقه دماوند، منطقه شمال یا منطقه جنوب متفاوت است ولی این دلیلی بر برتری عسل هیچ*کدام از این مناطق بر همدیگر نیست. در واقع مشخصه*های دیگری در کیفیت عسل ملاک است که توسط خریداران قابل تشخیص نیستند.
عسل*ها و قندهای ساده و مرکب
معیار ما برای عسل با کیفیت این است که از نظر آزمایشگاهی نسبت قندهای مرکب به قندهای ساده، خیلی کمتر باشد؛ یعنی قندهای ساده باید بیشتر از قندهای مرکب باشند. به عنوان نمونه، از نظر آزمایشگاهی عسل خوب، عسلی است که ساکاروز کمتری داشته باشد؛ زیرا ساکاروز یک قند مرکب محسوب می*شود. قندهای ساده*ای که در عسل وجود دارد شامل گلوکز و فروکتوز هستند. این ۲ نوع قند حدود ۷۰ تا ۷۵ درصد قندهای داخل عسل را تشکیل می*دهند. حتما می*پرسید چرا قندهای ساده به قندهای مرکب ارجحیت دارند؟ پاسخ این است که قندهای ساده خیلی سریع جذب می*شوند و نیاز به هضم در دستگاه گوارش ندارند. بنابراین عسل برای بیماران گوارشی بسیار مفید است؛ در حالی که قندهای مرکب نیاز به هضم دارند. عمل هضم نیاز به صرف انرژی دارد و جذبش دیر اتفاق می*افتد. به همین دلیل است که می*گوییم عسل یک ماده انرژی*بخش بوده و بهتر است صبح*ها میل شود.
عسل و خاصیت کش آمدن
یادتان باشد، عسلی خوب است که درصد رطوبتش کم باشد. البته مردم هم معیارهایی دارند که به نوعی موید همان نکات آزمایشگاهی است. یکی از باورهای مردم در مورد عسل این است که عسل خوب باید کش بیاید و هرچه بیشتر کش بیاید از مرغوبیت بالاتری برخوردار است. البته این تنها شاخص مرغوبیت عسل نیست زیرا عسل*های تقلبی زیادی در بازار وجود دارند که خوب هم کش می*آیند.
عسل و دیابت
نکته*ای که لازم می*بینم به آن اشاره کنم این است که در فرهنگ عمومی مردم این باور وجود دارد که افراد مبتلا به دیابت می*توانند عسل بخورند و منعی برای استفاده از آن ندارند. این باور، باور غلطی است و ما هیچ*گاه به افراد مبتلا به دیابت توصیه نمی*کنیم که بدون ملاحظه عسل بخورند و آن را جایگزین قند و شکر کنند. بد نیست ریشه این باور را بدانید زیرا یک نکته علمی در آن نهفته اما از آن بد برداشت شده است. همان*طور که ذکر شد ۷۰ تا ۷۵ درصد قندهای موجود در عسل را گلوکز و فروکتوز تشکیل می*دهند و تفاوتی که بین گلوکز و فروکتوز وجود دارد، این است که فروکتوز برای جذب در بدن انسان نیاز به حضور انسولین ندارد ولی گلوکز برای جذب نیازمند انسولین است. به همین دلیل بعضی*ها فکر می*کنند چون در عسل فروکتوز وجود دارد پس دیابتی*ها که مشکل انسولین دارند، می*توانند هر چقدر خواستند عسل بخورند و گلوکز آن را در نظر نمی*گیرند؛ در حالی که نسبت گلوکز به فروکتوز در عسل بالا است. البته بعضی از انواع عسل هستند که مقدار فروکتوزشان خیلی زیاد است؛ مانند عسل اقاقیا که درصد فروکتوز بالاتری نسبت به گلوکز دارد. به همین دلیل، توصیه ما به دیابتی*ها این است که اگر می*خواهید عسل مصرف کنید، پس از مشورت با متخصص تغذیه* و تعیین مقدار مصرفی توسط ایشان، ترجیحا از عسل اقاقیا استفاده کنید اما استفاده زیاد و خودسرانه این عسل نیز به هیچ وجه توصیه نمی*شود.
عسل؛ گزینه*ای برای صبحانه
اگر عسل تولیدشده واقعا از گیاهان یادشده باشد، خواص همان گیاهان را نیز در خود دارد ولی عسل به عنوان یک تقویت*کننده عمومی بدن محسوب می*شود و اینکه فکر کنید با خوردن یک بار عسل آویشن می*توانید تمام فواید درمانی آویشن را به*دست بیاورید، سخت در اشتباه*اید. در واقع مصرف عسل باید به صورت بلندمدت در سبد غذایی روزانه وجود داشته باشد تا بتواند در درازمدت اثرات تقویت*کننده، پیشگیرنده و درمانی خودش را بگذارد. ضمن اینکه خوردن عسل وقت خاصی ندارد و شما می*توانید هر زمان که خواستید آن را مصرف کنید ولی چون عسل انرژی*زاست و سبب ایجاد انرژی و نشاط در یک روز کاری می*شود، خوردنش را در صبحانه توصیه می*کنیم.

سلام به همگی و ممنون از آقا رضا بخاطر مطلبش ... اما ما طرز تشخیص عسل اصل رو نفهمیدیم!!! یه چیزایی توی اون 2 واحدی پرورش زنبود عسل خوندیم ولی مطالب ضد و نقیض زیاده و واقعیتش با این دو واحد چیز به درد بخوری دستگیر ما نشد ... حالا اگه دوستی تجربه ای چیزی داره یا کتابی، مطلبی و یا مقاله ی موثقی در این رابطه داره حتما به اشتراک بذاره ...
