دکتر صادقیان : نظارت بر سلامت شیر از تولید تا توزیع بر عهده دانشگاههای علوم پزشکی است!!!

مدیر نظارت بر مواد غذایی دانشگاه علوم پزشکی ایران گفت: نظارت بر سلامت شیر از زمان تولید تا توزیع با دانشگاه*های علوم پزشکی است و باید تقویت شود .
دکتر وحید صادقیان با بیان اینکه تولید شیر یک پروسه طولانی است و امکان ورود مواد شیمیایی و تقلبی در روند تولید شیر وجود دارد، اظهار داشت: سلامت شیر از مزرعه و علوفه*ای دام آغاز می*شود و تا عرضه آن ادامه دارد. اگر تغذیه دام صحیح نباشد و علوفه*هایی که کپک روی آنها رشد کرده، توسط دام خورده شود، موجب ایجاد مایکوتوکسین*هایی می*شود که مهمترین آنها آفلاتوکسین M1 است که مستقیماً در شیر وارد می*شود.
وی گفت: اگر برای درمان دام از کورتیکواستروئیدها استفاده شود، این مواد در شیر وارد می*شود. از مسائل دیگر که باید به آن توجه زیادی شود بیماری*های مشترک بین دام و انسان مانند سل و بروسلوز است که باید کنترل شوند.
صادقیان خاطر نشان کرد: در کشورهای پیشرفته واحدهایی را برای جمع*آوری شیر تعبیه کرده*اند که شیرها را آزمایش و شیرهای سالم را انبار و توزیع می*کنند چرا که شیر باید بلافاصله پس از دوشیده *شدن سرد شود و اگر این کار صورت نگیرد به سرعت میکروارگانیزم*ها در آن رشد می*کند.
وی یادآور شد: در هنگام تولید شیر امکان دارد یک سری تقلب*هایی از جمله وارد کردن مواد شیمیایی به شیر به وجود آید که دانشگاه*های علوم پزشکی باید مراقب این موضوع باشند تا مراحل پاستوریزاسیون و استریلیزاسیون به نحو صحیحی انجام شود.
مدیر نظارت بر مواد غذایی و آرایشی دانشگاه علوم پزشکی ایران با اشاره به اینکه برخی شیرها مزه آب می*دهند؛ تصریح کرد: این موضوع می*تواند به دلایل مختلفی از جمله کم*شدن چربی و به تبع آن اضافه*شدن فاز آبی به آن و تغذیه نادرست خود دام باشد.
وی با اشاره به اینکه شیر پس از دوشیده*شدن باید در دمای 4 درجه نگهداری شود؛ ادامه داد : دامدار نباید با کارخانه شیر مستقیماً رابطه داشته باشد چرا که ممکن است شیر را شبانه در تانکر*هایی نگهداری کنند و پس از رسیدن صبح به کارخانه شیر را منتقل کنند که این کار باعث آلوده*شدن شیر خواهد شد.
این اظهار نظر از سوی دکتر وحید صادقیان یقیناً باعث تأسف و هشدار و البته نشانه تداخلات در وظایف و قانون ناقص است. هشدار به مسئولین دامپزشکی اعم از سازمان دامپزشکی ، نظام دامپزشکی و حتی جامعه دامپزشکان ایران که باید حافظ منافع صنف دامپزشکی و زحمات همکاران عزیزمان باشند.
